Lost Crops of Africa: Volume I, Grains

Injera, the most important bread in Ethiopian cooking, is normally made from tef. It is a thick spongy pancake in which other food can be sandwiched or rolled. The pancakes are only a few mm thick but can be up to half a meter across. (Panos picture)
